For the Cookie Dough

- 1 cup Granulated sugar
- 1 large Egg yolk
- 1 teaspoon Pure vanilla extract
- 1 tablespoon Liquid red food coloring
- 2 cups All-purpose flour
- 1 tablespoon Unsweetened natural cocoa powder
- 1 teaspoon Baking powder
- 1 pinch Salt to taste
For the Cheesecake Filling
- 8 ounces Cream cheese softened
- 1/4 cup Granulated sugar
- 1 teaspoon Pure vanilla extract
Baking Instructions
Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
Beat the butter and sugar together for about 2–3 minutes until light and fluffy.
Mix in the egg yolk, vanilla extract, and food coloring until fully combined.
Whisk the flour, cocoa powder, baking powder, and salt in a separate bowl.
Combine the dry ingredients with the wet mixture until a soft dough forms.
Beat the cream cheese, sugar, and vanilla for the cheesecake filling until smooth.
Scoop tablespoon-sized balls of dough onto prepared baking sheets, about 2 inches apart.
Press a shallow indent into each dough ball using your thumb.
Add 1/2 teaspoon of cheesecake filling into each indentation.
Bake for 10–12 minutes until edges feel set but centers are still soft.
Cool cookies on the pan for 5 minutes, then transfer to a wire rack to cool completely.
Dust with powdered sugar for an extra touch of sweetness before serving.
