How to Make Red Velvet Cookie Cups
Preheat oven to 350°F (175°C).
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
Add eggs and vanilla and beat until smooth.
In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
Gradually mix dry ingredients into wet mixture until just combined.
Add red food coloring and mix until well combined.
Scoop dough into greased muffin tin, filling each about 2/3 full.
Bake for 12-15 minutes until edges are set but centers look soft.
Cool in the tin for 10 minutes, then transfer to wire rack to cool completely.
Beat together cream cheese, powdered sugar, and vanilla until smooth for frosting.
Pipe cream cheese frosting into cooled cookie cups.
Optional: Sprinkle with red and white sprinkles for a festive touch.
