  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon red food coloring

For the Frosting

  • 8 ounces cream cheese softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

How to Make Red Velvet Cookie Cups

  • Preheat oven to 350°F (175°C).
  • In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  • Add eggs and vanilla and beat until smooth.
  • In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • Gradually mix dry ingredients into wet mixture until just combined.
  • Add red food coloring and mix until well combined.
  • Scoop dough into greased muffin tin, filling each about 2/3 full.
  • Bake for 12-15 minutes until edges are set but centers look soft.
  • Cool in the tin for 10 minutes, then transfer to wire rack to cool completely.
  • Beat together cream cheese, powdered sugar, and vanilla until smooth for frosting.
  • Pipe cream cheese frosting into cooled cookie cups.

Notes

Optional: Sprinkle with red and white sprinkles for a festive touch.
