Baking Sheet
For the Cookie Dough
- 1 cup unsalted butter softened
- 1 cup powdered sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 tablespoon instant coffee dissolved in hot water
- 2 cups all-purpose flour
- 1/4 teaspoon salt
For the Toppings
- 1/2 cup melted chocolate for drizzling
- 1 tablespoon cocoa powder for dusting
- 1/2 cup white chocolate for drizzling
- 1/4 cup coffee bean candies for decoration
Making the Cookies
Mix the instant coffee with hot water until smooth and set it aside.
Beat the softened butter and powdered sugar together for about 3 minutes until light and fluffy.
Mix in the egg yolk, vanilla extract, and dissolved coffee until smooth.
Combine flour and salt in a separate bowl, then gradually mix into the wet ingredients until a soft dough forms.
Pipe the dough into rosettes or roll into balls and press lightly.
Chill the shaped cookies in the fridge for 10–15 minutes.
Preheat oven to 350°F (175°C) and bake cookies for 10–12 minutes or until edges are lightly golden.
Allow cookies to cool completely before garnishing with melted chocolate or serving plain.
For the best texture, make sure your butter is at room temperature. Avoid overmixing the dough after adding flour to keep the cookies tender.
