Instructions

How to Make Seafood Fried Rice

  • Begin by chopping all your vegetables and seafood before you start cooking. This makes the process smooth and efficient as everything will be at your fingertips.
  • In a hot wok, add the vegetable oil and let it heat up over medium-high. Sauté the garlic and onions until they are fragrant, which should take about 1-2 minutes.
  • Introduce the shrimp and squid to the wok, cooking for 2-3 minutes until the shrimp turns beautifully pink. Remove the seafood from the wok to prevent overcooking.
  • Pour in the lightly beaten egg and let it cook, scrambling it gently. Once cooked, push the eggs to the side of the wok to make room for the vegetables.
  • Toss in the diced carrots and green peas, cooking for 2-3 minutes until they become tender-crisp and vibrant in color.
  • Break apart any clumps in the cold jasmine rice, then add it to the wok. Stir-fry the rice with the egg and vegetables until everything is well combined and heated through, about another 2-3 minutes.
  • Pour in the soy sauce, oyster sauce, and sprinkle the ground white pepper. Toss everything well so every grain of rice is evenly coated in those rich flavors.
  • Return the cooked seafood and chopped green onions back to the wok. Stir-fry for an additional 1-2 minutes, allowing the flavors to meld.
  • Dish out your Seafood Fried Rice hot and garnish with lime wedges and cilantro for an extra touch of freshness.

Notes

For perfect Seafood Fried Rice, always start with day-old jasmine rice as it helps to prevent clumping and results in a better texture. Avoid overcooking your seafood by removing it from the wok as soon as the shrimp turns pink. When cooking the egg, scrambling it gently on the side of the wok allows for a fluffy texture that blends beautifully with the rice. Lastly, make sure the wok is hot enough when you stir-fry to achieve that desirable smoky flavor while cooking everything evenly.
