Soup Base
- 2 lbs Boneless chicken breasts
- 1 cup Quinoa rinsed
- 6 cups Chicken broth
- 1 can Diced tomatoes
Veggies
- 2 cups Carrots diced
- 2 stalks Celery diced
- 1 large Onion chopped
- 3 cloves Garlic minced
Seasoning
- 1 teaspoon Dried thyme
- 1 teaspoon Dried oregano
- 1 teaspoon Salt to taste
- 1 teaspoon Pepper to taste
Preparation
Place the boneless chicken breasts in the bottom of your slow cooker.
Toss in the rinsed quinoa, chicken broth, diced tomatoes, carrots, celery, onion, garlic, thyme, oregano, salt, and pepper.
Gently stir the mixture until everything is well combined.
Cover the slow cooker, then set it to low for 6-8 hours or high for 3-4 hours.
Once cooked, carefully shred the chicken using two forks right in the cooker.
Ladle the warm soup into bowls and serve hot.
Garnish with fresh parsley for added flavor and presentation.
