Ingredients

Soup Base

  • 2 lbs Boneless chicken breasts
  • 1 cup Quinoa rinsed
  • 6 cups Chicken broth
  • 1 can Diced tomatoes

Veggies

  • 2 cups Carrots diced
  • 2 stalks Celery diced
  • 1 large Onion chopped
  • 3 cloves Garlic minced

Seasoning

  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste

Instructions

Preparation

  • Place the boneless chicken breasts in the bottom of your slow cooker.
  • Toss in the rinsed quinoa, chicken broth, diced tomatoes, carrots, celery, onion, garlic, thyme, oregano, salt, and pepper.
  • Gently stir the mixture until everything is well combined.
  • Cover the slow cooker, then set it to low for 6-8 hours or high for 3-4 hours.
  • Once cooked, carefully shred the chicken using two forks right in the cooker.
  • Ladle the warm soup into bowls and serve hot.

Notes

Garnish with fresh parsley for added flavor and presentation.
