Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cream together the softened unsalted butter, brown sugar, and granulated sugar in a large bowl until it’s fluffy and light. This should take about 2-3 minutes.
  • Add the ripe mashed bananas, large eggs, and vanilla extract; mix until well combined and smooth.
  • Combine the dry ingredients—flour, baking soda, and salt—in another bowl.
  • Gradually mix the dry ingredients into the banana mixture, stirring just until combined.
  • Fold in the crushed vanilla wafers and optional chopped walnuts, if using.
  • Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are golden brown.
  • Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Use room temperature butter for a better texture. Mash ripe bananas thoroughly for maximum flavor. Don't overmix the dough to keep cookies soft and chewy.
