For the Filling
- 1 can Black beans drained and rinsed
- 1 cup Corn sweet, frozen or canned
- 1 cup Bell peppers chopped
- 1 cup Spinach chopped
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- 1 cup Cheese shredded, any type
For the Wrapping
- 10 pieces Egg roll wrappers
- 2 cups Oil for frying neutral oil
How to Make Southwest Egg Rolls
In a large mixing bowl, stir together the black beans, corn, chopped bell peppers, spinach, cumin, chili powder, and cheese until well combined.
Take an egg roll wrapper, and place a generous spoonful of the filling mixture in the center.
Wet the edges of the wrapper with a little water and carefully fold it up, sealing the edges tightly.
In a frying pan, heat oil over medium heat until it's shimmering.
Gently place the egg rolls in the hot oil, cooking them until they turn golden brown, about 2-3 minutes on each side.
Once golden brown, carefully remove the egg rolls and place them on paper towels to drain any excess oil.
Serve with salsa or guacamole for added flavor!
