Ingredients

For the Filling

  • 1 can Black beans drained and rinsed
  • 1 cup Corn sweet, frozen or canned
  • 1 cup Bell peppers chopped
  • 1 cup Spinach chopped
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 cup Cheese shredded, any type

For the Wrapping

  • 10 pieces Egg roll wrappers
  • 2 cups Oil for frying neutral oil

Instructions

How to Make Southwest Egg Rolls

  • In a large mixing bowl, stir together the black beans, corn, chopped bell peppers, spinach, cumin, chili powder, and cheese until well combined.
  • Take an egg roll wrapper, and place a generous spoonful of the filling mixture in the center.
  • Wet the edges of the wrapper with a little water and carefully fold it up, sealing the edges tightly.
  • In a frying pan, heat oil over medium heat until it's shimmering.
  • Gently place the egg rolls in the hot oil, cooking them until they turn golden brown, about 2-3 minutes on each side.
  • Once golden brown, carefully remove the egg rolls and place them on paper towels to drain any excess oil.

Notes

Serve with salsa or guacamole for added flavor!
