Instructions

  • Preheat your oven to 375°F (190°C).
  • Cut the spaghetti squash in half and scoop out the seeds.
  • Brush the inside of the squash halves with olive oil, then season with salt and pepper.
  • Place the squash halves cut side down on a baking sheet.
  • Bake for 30-40 minutes until tender.
  • While baking, heat the cream in a saucepan and add minced garlic, salt, pepper, and paprika.
  • Stir in the cheddar and parmesan until melted.
  • Scrape the spaghetti squash into strands and mix with the cheese sauce.
  • Transfer the mixture to a baking dish and top with additional cheese.
  • Bake for another 15 minutes until it’s bubbly and golden.

Notes

Optional: Garnish with fresh parsley or a sprinkle of paprika for an extra pop of flavor and color.
