Instructions
Preheat your oven to 375°F (190°C).
Cut the spaghetti squash in half and scoop out the seeds.
Brush the inside of the squash halves with olive oil, then season with salt and pepper.
Place the squash halves cut side down on a baking sheet.
Bake for 30-40 minutes until tender.
While baking, heat the cream in a saucepan and add minced garlic, salt, pepper, and paprika.
Stir in the cheddar and parmesan until melted.
Scrape the spaghetti squash into strands and mix with the cheese sauce.
Transfer the mixture to a baking dish and top with additional cheese.
Bake for another 15 minutes until it’s bubbly and golden.
