Quesadilla Filling
- 1 cup fresh spinach
- 1 cup shredded cheese mozzarella or cheddar
- 1 teaspoon garlic powder or fresh minced garlic

Tortillas
- 2 pieces flour tortillas or corn tortillas for gluten-free

- 1 tablespoon olive oil or canola/avocado oil
How to Make Spinach & Cheese Quesadillas
Begin by heating 1 tablespoon of olive oil in a skillet over medium heat.
Add the fresh spinach to the skillet. Sauté until it’s wilted, about 2-3 minutes.
In a bowl, combine the sautéed spinach with shredded cheese, garlic powder, salt, and pepper. Stir until well-combined.
Place one tortilla in the skillet and add a scoop of the spinach and cheese mixture on top. Cover with another tortilla.
Cook for 3-4 minutes on each side, until golden brown and cheese is melted.
Remove the quesadilla from the skillet, slice into wedges, and serve warm.
Serve with salsa or guacamole for extra flavor.
