Ingredients

Quesadilla Filling

  • 1 cup fresh spinach
  • 1 cup shredded cheese mozzarella or cheddar
  • 1 teaspoon garlic powder or fresh minced garlic
  • to taste salt
  • to taste pepper

Tortillas

  • 2 pieces flour tortillas or corn tortillas for gluten-free

For Cooking

  • 1 tablespoon olive oil or canola/avocado oil

Instructions

How to Make Spinach & Cheese Quesadillas

  • Begin by heating 1 tablespoon of olive oil in a skillet over medium heat.
  • Add the fresh spinach to the skillet. Sauté until it’s wilted, about 2-3 minutes.
  • In a bowl, combine the sautéed spinach with shredded cheese, garlic powder, salt, and pepper. Stir until well-combined.
  • Place one tortilla in the skillet and add a scoop of the spinach and cheese mixture on top. Cover with another tortilla.
  • Cook for 3-4 minutes on each side, until golden brown and cheese is melted.
  • Remove the quesadilla from the skillet, slice into wedges, and serve warm.

Notes

Serve with salsa or guacamole for extra flavor.
