Instructions

How to Make Spinach Cheese Stuffed Crêpe Rolls

  • Whisk together the flour, eggs, milk, melted butter, and salt in a mixing bowl until smooth. Let the batter rest for about 15 minutes.
  • Heat a non-stick skillet or crêpe pan over medium heat and lightly grease it with cooking spray or butter.
  • Pour about 1/4 cup of the batter into the pan, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges start to lift.
  • Flip and cook for another minute, then stack the cooked crêpes on a plate.
  • Sauté the chopped spinach in a skillet over medium heat until wilted. Remove from heat and let it cool slightly.
  • Combine the ricotta cheese, mozzarella cheese, Parmesan cheese, sautéed spinach, garlic powder, salt, and pepper in a bowl. Mix thoroughly.
  • Fill one crêpe with a generous spoonful of the filling along one edge. Roll the crêpe tightly around the filling.
  • Repeat the process with the remaining crêpes until you have a platter full.
  • Warm the marinara sauce in a saucepan over low heat if using.
  • Serve the crêpe rolls on a platter and drizzle with marinara sauce if desired. Garnish with fresh basil leaves.
