  • 4 pieces boneless chicken breasts choose boneless for a quicker cooking time

  • 1 cup mushrooms, chopped any variety works, but cremini add depth
  • 1 cup cream cheese use full-fat for creaminess or low-fat for a lighter option
  • 1/2 cup shredded mozzarella offers a lovely stretch as it melts
  • 2 cloves garlic, minced fresh garlic adds a robust aroma and taste

  • 1 tablespoon olive oil helps sauté the veggies to perfect tenderness

Cooking Instructions

  • Preheat the oven to 375°F (190°C).
  • Heat the olive oil in a skillet over medium heat. Add the minced garlic, chopped mushrooms, and fresh spinach, sautéing until they are tender and the spinach is wilted, about 5 minutes.
  • In the skillet, mix the softened cream cheese and shredded mozzarella into the sautéed vegetables. Stir until well combined.
  • Slice the chicken breasts horizontally to create a pocket without cutting all the way through.
  • Generously fill each chicken breast pocket with the spinach and mushroom mixture. Press them closed gently.
  • Sprinkle salt and pepper on each stuffed chicken breast.
  • Place the stuffed chicken in a baking dish and bake for 25-30 minutes, or until cooked through and reaches an internal temperature of 165°F (74°C).

Notes

Serve with a side of roasted vegetables for a complete meal.
