Cooking Instructions
Preheat the oven to 375°F (190°C).
Heat the olive oil in a skillet over medium heat. Add the minced garlic, chopped mushrooms, and fresh spinach, sautéing until they are tender and the spinach is wilted, about 5 minutes.
In the skillet, mix the softened cream cheese and shredded mozzarella into the sautéed vegetables. Stir until well combined.
Slice the chicken breasts horizontally to create a pocket without cutting all the way through.
Generously fill each chicken breast pocket with the spinach and mushroom mixture. Press them closed gently.
Sprinkle salt and pepper on each stuffed chicken breast.
Place the stuffed chicken in a baking dish and bake for 25-30 minutes, or until cooked through and reaches an internal temperature of 165°F (74°C).
Serve with a side of roasted vegetables for a complete meal.
