  • 1 cup Coconut milk Adds creaminess and a tropical touch that pairs beautifully with strawberries.

Instructions

How to Make Strawberry Mochi Donuts

  • Preheat your oven to 350°F (175°C) and grease a donut pan generously to ensure easy release once baked.
  • Combine the glutinous rice flour, granulated sugar, baking powder, and salt in a mixing bowl. Whisk these dry ingredients together until well mixed.
  • Mix the coconut milk, pureed strawberries, and vanilla extract in another bowl. Stir until everything is well combined.
  • Pour the wet ingredients into the dry ingredients, and mix until smooth and well combined.
  • Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
  • Bake in the preheated oven for about 15–18 minutes, or until the donuts are set and a toothpick inserted comes out clean.
  • Cool the donuts in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
  • Whisk together the powdered sugar and milk in a small bowl until smooth. Adjust the consistency as needed.
  • Dip the tops of the completely cool donuts in the glaze or drizzle it over them.
  • Top with sliced fresh strawberries and shredded coconut if desired.
  • Serve immediately or store in an airtight container for later enjoyment.

Notes

For the perfect Strawberry Mochi Donuts, mix the dry ingredients thoroughly to avoid clumps. Allow the donuts to cool completely before glazing to ensure the glaze adheres nicely.
