Ingredients

For the Zucchini

  • 4 medium zucchinis for scooping and stuffing

For the Filling

  • 1 cup cooked quinoa adds nutrition and flavor
  • 1 cup diced tomatoes adds freshness
  • 1/2 cup chopped onions sautéed
  • 1/2 cup shredded cheese for topping

For the Seasoning

  • 2 cloves minced garlic for flavor
  • 1 teaspoon dried oregano for seasoning
  • salt and pepper to taste

Instructions

Cooking Instructions

  • Preheat your oven to 375°F (190°C).
  • Slice the zucchinis in half lengthwise and scoop out the insides.
  • Sauté the chopped onions and minced garlic in a pan over medium heat for 3-5 minutes.
  • Combine diced tomatoes, cooked quinoa, dried oregano, salt, and pepper with the sautéed mixture.
  • Stuff the zucchini halves generously with the filling.
  • Top each filled zucchini with shredded cheese.
  • Bake in the preheated oven for 25-30 minutes.
