For the Zucchini
- 4 medium zucchinis for scooping and stuffing
For the Filling
- 1 cup cooked quinoa adds nutrition and flavor
- 1 cup diced tomatoes adds freshness
- 1/2 cup chopped onions sautéed
- 1/2 cup shredded cheese for topping
For the Seasoning
- 2 cloves minced garlic for flavor
- 1 teaspoon dried oregano for seasoning

Cooking Instructions
Preheat your oven to 375°F (190°C).
Slice the zucchinis in half lengthwise and scoop out the insides.
Sauté the chopped onions and minced garlic in a pan over medium heat for 3-5 minutes.
Combine diced tomatoes, cooked quinoa, dried oregano, salt, and pepper with the sautéed mixture.
Stuff the zucchini halves generously with the filling.
Top each filled zucchini with shredded cheese.
Bake in the preheated oven for 25-30 minutes.
