  • 2 cups diced sweet potatoes
  • 1 can black beans drained and rinsed
  • 1 cup cooked quinoa
  • 1 medium avocado sliced
  • 1/4 cup fresh cilantro chopped

  • 1 teaspoon cumin
  • 1 teaspoon paprika

Instructions

How to Make Sweet Potato Black Bean Bowl

  • Preheat your oven to 400°F (200°C).
  • Toss the diced sweet potatoes in a mixing bowl with olive oil, cumin, paprika, salt, and pepper.
  • Spread the seasoned sweet potatoes in a single layer on a baking sheet. Roast for 25-30 minutes.
  • Layer a bowl with fluffy cooked quinoa, add roasted sweet potatoes and black beans.
  • Top your bowl with avocado slices and fresh cilantro.

Notes
