For the Chili

  • 2 cups sweet potatoes, diced
  • 1 can black beans, rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth low-sodium
  • 2 tbsp chili powder
  • 1 tsp cumin
  • to taste salt
  • to taste pepper

Instructions

How to Make Sweet Potato & Black Bean Chili

  • Start by warming a large pot over medium heat.
  • Add chopped onion and bell pepper to the pot and sauté for about 5 minutes until softened.
  • Toss in the minced garlic and sauté for another minute until fragrant.
  • Stir in the diced sweet potatoes, rinsed black beans, diced tomatoes, vegetable broth, chili powder, and cumin.
  • Increase the heat slightly and bring the mixture to a boil, then reduce to a simmer for 25-30 minutes.
  • Once cooked, season with salt and pepper to taste and stir well.
  • Ladle the chili into bowls and serve hot.

Notes

Top with avocado or fresh cilantro for added flavor.
