For the Chili
- 2 cups sweet potatoes, diced
- 1 can black beans, rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 medium bell pepper, chopped
- 1 can diced tomatoes
- 4 cups vegetable broth low-sodium
- 2 tbsp chili powder
- 1 tsp cumin

How to Make Sweet Potato & Black Bean Chili
Start by warming a large pot over medium heat.
Add chopped onion and bell pepper to the pot and sauté for about 5 minutes until softened.
Toss in the minced garlic and sauté for another minute until fragrant.
Stir in the diced sweet potatoes, rinsed black beans, diced tomatoes, vegetable broth, chili powder, and cumin.
Increase the heat slightly and bring the mixture to a boil, then reduce to a simmer for 25-30 minutes.
Once cooked, season with salt and pepper to taste and stir well.
Ladle the chili into bowls and serve hot.
