Ingredients

For the Sweet Potatoes

  • 4 medium sweet potatoes naturally sweet, perfect base for filling
  • 1 tablespoon olive oil drizzle for flavor and crispiness
  • to taste salt for seasoning

For the Filling

  • 1 pound ground turkey or beef choose turkey for a leaner option
  • 1 can black beans 15 ounces, drained and rinsed
  • 1 cup corn frozen or canned
  • 1 packet taco seasoning or homemade
  • 1/2 cup diced tomatoes fresh or canned
  • 1/2 cup onion diced

For Topping

  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 avocado sliced or diced
  • 1/2 cup sour cream or Greek yogurt for drizzling
  • to taste fresh cilantro chopped
  • to taste lime wedges for serving

Instructions

How to Make Taco Stuffed Sweet Potatoes

  • Preheat your oven to 400°F (200°C).
  • Prepare the sweet potatoes by washing and drying them thoroughly. Poke several holes in each potato with a fork, drizzle with olive oil, and sprinkle a pinch of salt.
  • Bake the sweet potatoes on a baking sheet for about 40-45 minutes, or until tender.
  • Sauté in a large skillet by heating 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent.
  • Brown the ground turkey or beef by adding it to the skillet. Cook until fully browned and crumbled.
  • Combine the black beans, corn, diced tomatoes, and taco seasoning in the skillet. Stir well and cook for 5 minutes.
  • Cool the baked sweet potatoes slightly. Slice each potato down the center, careful not to cut completely through.
  • Fluff the insides of the sweet potatoes with a fork, making space for the filling. Fill each potato with the taco mixture.
  • Top each stuffed sweet potato with shredded cheese.
  • Return the stuffed sweet potatoes to the oven for about 5-7 minutes, or until the cheese is melted and bubbly.
  • Garnish with avocado, sour cream or Greek yogurt, fresh cilantro, and lime wedges.

Notes
