For the Sweet Potatoes
- 4 medium sweet potatoes naturally sweet, perfect base for filling
- 1 tablespoon olive oil drizzle for flavor and crispiness

For the Filling
- 1 pound ground turkey or beef choose turkey for a leaner option
- 1 can black beans 15 ounces, drained and rinsed
- 1 cup corn frozen or canned
- 1 packet taco seasoning or homemade
- 1/2 cup diced tomatoes fresh or canned
- 1/2 cup onion diced
For Topping
- 1 cup shredded cheese cheddar or Mexican blend
- 1 avocado sliced or diced
- 1/2 cup sour cream or Greek yogurt for drizzling
- to taste fresh cilantro chopped
- to taste lime wedges for serving
How to Make Taco Stuffed Sweet Potatoes
Preheat your oven to 400°F (200°C).
Prepare the sweet potatoes by washing and drying them thoroughly. Poke several holes in each potato with a fork, drizzle with olive oil, and sprinkle a pinch of salt.
Bake the sweet potatoes on a baking sheet for about 40-45 minutes, or until tender.
Sauté in a large skillet by heating 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent.
Brown the ground turkey or beef by adding it to the skillet. Cook until fully browned and crumbled.
Combine the black beans, corn, diced tomatoes, and taco seasoning in the skillet. Stir well and cook for 5 minutes.
Cool the baked sweet potatoes slightly. Slice each potato down the center, careful not to cut completely through.
Fluff the insides of the sweet potatoes with a fork, making space for the filling. Fill each potato with the taco mixture.
Top each stuffed sweet potato with shredded cheese.
Return the stuffed sweet potatoes to the oven for about 5-7 minutes, or until the cheese is melted and bubbly.
Garnish with avocado, sour cream or Greek yogurt, fresh cilantro, and lime wedges.
