Ingredients

For the Sandwich

  • 4 slices Sourdough bread Crispy on the outside and soft inside.
  • 8 oz Cooked turkey breast Use leftover turkey.
  • 4 tbsp Pesto Aromatic herb paste.
  • 4 oz Mozzarella cheese Melts wonderfully.
  • 1/2 cup Sun-dried tomatoes Optional but recommended.

For Grilling

  • 2 tbsp Olive oil For brushing on the outside.

Instructions

Preparation

  • Spread a generous layer of pesto on one side of each slice of sourdough bread.
  • Layer half of the slices with cooked turkey breast, mozzarella cheese, and sun-dried tomatoes if using.
  • Preheat your panini press or heat a skillet over medium heat.
  • Brush the outside of each sandwich lightly with olive oil.
  • Grill the sandwiches on the panini press or in the skillet for about 3-5 minutes on each side.
  • Slice the panini melts in half and serve warm.

Notes

Optional: Add a sprinkle of fresh basil for extra flavor.
