For the Dough
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 packet active dry yeast
- 1 teaspoon sugar
- 1 cup warm water
- 2 tablespoons olive oil
For the Filling
- 1 pound ground beef or lamb
- 1 small onion chopped
- 1 medium bell pepper chopped
- 2 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika

- 1/4 cup fresh parsley chopped
- 1 cup grated cheese optional, like mozzarella or feta
Making Turkish Pide Boats
In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
In a large mixing bowl, combine the flour and salt. Make a well in the center, then pour in the yeast mixture and olive oil. Mix until the dough starts to form.
Transfer the dough to a floured surface and knead for about 8-10 minutes until it's smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour.
In a skillet over medium heat, add the ground meat, chopped onion, bell pepper, and garlic. Cook until browned and tender.
Stir in cumin, paprika, salt, pepper, and chopped parsley. Remove from heat and let it cool slightly. Mix in grated cheese if desired.
Preheat your oven to 475°F (245°C) and line a baking sheet with parchment paper.
Once the dough has risen, punch it down and divide into 4 equal pieces. Roll each into an oval shape, creating a raised edge.
Place the shaped dough on the baking sheet. Spoon the filling into the center of each boat.
Bake for about 12-15 minutes, or until the edges are golden brown.
Remove from the oven and let cool slightly before serving. Optionally brush with melted butter.
Store leftovers in an airtight container for up to 3 days, or freeze individually for up to 2 months. Reheat in the oven at 350°F (175°C).
