Ingredients

For the Dough

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 packet active dry yeast
  • 1 teaspoon sugar
  • 1 cup warm water
  • 2 tablespoons olive oil

For the Filling

  • 1 pound ground beef or lamb
  • 1 small onion chopped
  • 1 medium bell pepper chopped
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • 1/4 cup fresh parsley chopped
  • 1 cup grated cheese optional, like mozzarella or feta

Instructions

Making Turkish Pide Boats

  • In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
  • In a large mixing bowl, combine the flour and salt. Make a well in the center, then pour in the yeast mixture and olive oil. Mix until the dough starts to form.
  • Transfer the dough to a floured surface and knead for about 8-10 minutes until it's smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour.
  • In a skillet over medium heat, add the ground meat, chopped onion, bell pepper, and garlic. Cook until browned and tender.
  • Stir in cumin, paprika, salt, pepper, and chopped parsley. Remove from heat and let it cool slightly. Mix in grated cheese if desired.
  • Preheat your oven to 475°F (245°C) and line a baking sheet with parchment paper.
  • Once the dough has risen, punch it down and divide into 4 equal pieces. Roll each into an oval shape, creating a raised edge.
  • Place the shaped dough on the baking sheet. Spoon the filling into the center of each boat.
  • Bake for about 12-15 minutes, or until the edges are golden brown.
  • Remove from the oven and let cool slightly before serving. Optionally brush with melted butter.

Notes

Store leftovers in an airtight container for up to 3 days, or freeze individually for up to 2 months. Reheat in the oven at 350°F (175°C).
