Instructions

How to Make Veggie & Cheese Quesadilla Dinner

  • Warm up 1 tablespoon of olive oil in a skillet over medium heat until it shimmers.
  • Add the diced onion and bell pepper to the skillet. Cook for about 5 minutes, stirring regularly, until the vegetables are soft and the onion turns translucent.
  • Toss in 1 cup of chopped spinach, cooking for an additional 2 minutes until it wilts down.
  • Sprinkle a pinch of salt and pepper over the veggie mixture, stirring to combine.
  • Place one flour tortilla in the skillet. On one half, layer some of the sautéed veggie mixture and sprinkle ¼ cup of shredded cheese on top.
  • Carefully fold the tortilla in half, pressing gently. Cook for 2-3 minutes on each side or until it turns golden brown and the cheese is melty.
