Instructions

How to Make Veggie Mac and Cheese

  • Bring a pot of salted water to a boil, then cook the elbow macaroni according to the package instructions. This usually takes about 8-10 minutes. Drain and set aside.
  • In a large pot, melt 2 tablespoons of butter over medium heat until bubbly, ensuring it doesn't brown.
  • Add 2 tablespoons of all-purpose flour, 1 teaspoon of garlic powder, and a pinch of salt and pepper to the melted butter. Stir continuously until you create a smooth paste, about 1-2 minutes.
  • Gradually whisk in 1 cup of milk, continuing to stir to avoid lumps. Cook this mixture until it thickens and bubbles, about 3-5 minutes.
  • Once thickened, add 2 cups of shredded cheddar cheese to the pot. Stir until the cheese is fully melted and the sauce is smooth and creamy.
  • Gently add in 2 cups of broccoli florets, 1 cup of diced bell peppers, and 1 cup of shredded carrots. Cook for an additional 5 minutes until the veggies are tender but still vibrant!
